Anzac Biscuits

The classic Anzac ‘bikkie’ recipe is a simple mixture of flour, oats, golden syrup, dessicated coconut, sugar, butter and bicarbonate of soda. But we just made it the Grilo way: we added our Organic Cricket Powder, took out the dairy and here they are! Healthy and golden Anzac biscuits, loaded with protein and vitamin B12.


  • 3 tbs (30g) Organic Cricket Powder
  • 1½ cups oats
  • 1 cup dessicated coconut
  • 1 cup chopped macadamias
  • ¼ cup coconut oil
  • ½ cup rice malt syrup
  • 1 tsp boiling water
  • ½ tsp baking powder
  • 1 pinch of salt
  • Vanilla (optional)


Preheat oven to 180°C and line baking paper on a tray.
Mix cricket powder, oats, dessicated coconut and macadamias in a big bowl.
Melt the coconut oil and mix with the rice malt syrup, then add the mixture to the bowl, combining all ingredients.
Mix baking soda and boiling water in a cup, then add it to the big bowl and combine all ingredients slowly.
To scoop out cookie dough, use your hands or a spoon. Using your fingers press the little balls on the tray into cookie shape. Bake for 15 to 20 minutes or until golden!
