Apple Cake

Nutritionist Fran Dargaville was looking for a (not too) sweet treat, so she came up with this delicious real food apple cake, with a (not too) secret ingredient… cricket powder! Organic Cricket Powder is a complete protein source (AKA it contains all of the essential amino acids), it’s good for your gut (acts as a prebiotic) and it has a very mild flavour – a perfect way to add some extra nutrients into baking.   • 1 tbs (10g) Grilo Cricket Powder
  • 1 cup almond meal
  • 2 tbs arrowroot flour
  • 1½ cups finely chopped apples (skin on)
  • 2 eggs
  • 3 tbs honey
  • ¼ cup butter or coconut oil, melted
  • 1 tsp pure vanilla extract
  • ½ tsp sea salt
  • ½ tsp cinnamon
  • ½ tsp baking soda


Preheat oven to 180°C. Line a loaf tin with baking paper.

Add all dry ingredients to a bowl and stir until well mixed. Then add remaining ingredients to mixture and stir until thoroughly combined.

Pour mixture into lined loaf tin and bake in oven for 25-30 minutes or until cooked through.

Serve with coconut yoghurt.
