Chocolate Raw Cheesecake

This raw chocolate cheesecake is the most amazing healthy dessert ever. Because it’s raw this cheesecake contains far more nutrition than other baked desserts. The cacao tastes delicious and makes the perfect combination with the nutty flavour and chewy crust base.


Crust (base):


Creamy mix:

  • 2 ½ cups raw cashew nuts (soaked in 500 ml of water for at least 2 hours)
  • 300ml coconut cream
  • 100ml water
  • 1 tbs vanilla
  • ¼ cup coconut oil
  • 1 cup rice malt syrup
  • 3 tbs lucuma powder
  • 1 cup raw cacao powder


Before start this recipe, make sure you let the cashews soaking in water for at least 2 hours.
Begin putting all the crust base ingredients in a blender and pulse until all the ingredients are combine together.
Remove the mix out of the blender, divide into 5 portions and put each portion inside the a small jar. With the tip of your finger press it down until is nice and firm.
Wash the blender to remove any crumbs from the previews mix.
Drain the water from the cashew nuts and rinse it with fresh water. Place all ingredients from the creamy mix in to the blender with the cashews. Blend it for 2 minutes. The cheese cake mix should be very creamy, if there is a few lumps add a bit more water (1/4 cup).
Use a spatula to get all the mix out of the blender into a medium bowl, using a spoon divide mix evenly between the 5 jars.
Put the jars in the fridge to set for at least 30min.

After the cheesecake is set, put your favourite fruits on top and serve.
