Cricket Banana Pancakes by Pip Taylor

Pip believes nutrition is all about optimising health, enjoying life, enjoying food and being mindful of the future. She is passionate about healthy eating and her favourite place in the house is the kitchen where she creates nutritious meals for her family. Pip’s kids favourite breakfast meal is a banana pancake made with organic cricket powder. The toddlers love it because “the pancakes make us jump higher!”. And we do believe they can!

To serve:

  • coconut yoghurt
  • fresh berries
  • raw cacao powder


Using a fork, mesh bananas, add eggs and whisk well to combine. Stir through the cricket powder and vanilla or cinnamon.

Heat a non stick frypan over medium heat, add ½ tsp coconut oil. Drop 3 table spoon of batter and cook for 1-2 minutes until small bubbles appear on surface. Turn pancakes and cook further for another minute or so.

Turn out onto plate and continue cooking rest of batter adding more oil to the pan with each batch.

Serve a small stack topped with yoghurt and fresh berries!
