Cricket Chickpea Choc Chip Cookies

If you’ve never tried chickpea cookies, please do. This delicious and super easy recipe is by Stacey from Natural Spoonfuls. With no flour, no dairy and no white sugar, these are just full of chickpeas, and oh, peanut butter! One of our favourite cookie recipes so far. Thanks Stacey for sharing this!

Ingredients:

Servings: Approximately 16 cookies.

  • 1 tbs (10g) Grilo Cricket Powder
  • 1 x 400g can Chickpeas, drained & rinsed (or 230g soaked and cooked chickpeas)
  • ¼ cup peanut butter
  • 2 tsp vanilla extract
  • ¼ cup rice malt syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp baking powder
  • ¼ cup dark choc chips or cacao nibs

Method:

Preheat oven to 180 degrees conventional and line a baking tray with baking paper.

Blend all ingredients together, except choc chips. Then fold in choc chips.
Spoonful mixture on to baking tray. Feel free to play around with size, they can be tablespoon dollops or smaller for bite sized cookies.

Bake in oven for 10-12 mins. Allow to cool on tray for a further 5 minutes – leaving them on the tray allows them to cook a little bit more but still remain gooey. Yum!
