We’ve been searching for a good recipe of savoury gluten-free pumpkin bread for a long time, and we came across the delicious Nourish Everyday’s recipe. We just made a few personal adjustments and added an unique high protein and nutrient-dense ingredient: our Organic Cricket Powder. The result is a delicious healthy bread, perfect for brekkie or as a side for any meal!

  • 1 tbs (10g) Organic Cricket Powder
  • 240g gluten-free rolled oats (2 cups)
  • 100g almond flour (1 cup)
  • 60g tapioca flour (½ cup)
  • 2 tbs psyllium husk
  • ¼ cup nutritional yeast flakes
  • 1 ½ tsp baking powder
  • ¼ tsp bicarb soda
  • 1 tsp fine salt
  • 1 tsp turmeric powder (optional)

  • 220-240 grams diced pumpkin (steamed+cooled)
  • 3 eggs
  • 3 tbsp extra virgin olive oil
  • 180 ml water (or unsweetened nut milk)
  • 1 tbs apple cider vinegar

Preheat oven to 180°C and line a loaf tin with baking paper.
Place oats in the blender and blend until you have a coarse flour. Pour the oat flour into a large mixing bowl and add the other dry ingredients, then give everything a good stir so it’s well combined and there are no lumps.
In another bowl, place all wet ingredients and mix, making sure you mash the pumpkin and mix well the eggs.
Pour the wet mixture into the dry ingredients bowl, mixing until combined. The batter should be as thick as a very wet dough. Scoop the batter into your lined loaf tin and smooth down evenly.

Bake the loaf for approximately 1 hour at 180°C, or until the centre of the loaf feels firm and the colour turns golden brown. Enjoy!

Tip: To make your bread extra flavourful, we like to add add 1/2 tsp of garlic powder or garlic paste, rosemary and olives to the mixture. It tastes amazing!
