Gingerbread Man

It comes that time of the year when we all just want to bake Gingerbread, I mean, Cricket gingerbread! They look lovely and are so yummy. This recipe is a healthier version of the traditional Christmas Gingerbread cookies and it’s powered with Grilo Organic Cricket Powder, which is high in protein and vitamin B12.

  • 2 tbs Grilo Organic Cricket Powder
  • 3 Cups almond meal
  • 2 tbs Tapioca starch or arrowroot
  • ½ tsp Baking powder
  • ½ tsp Turmeric powder
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg
  • 4 Medjool dates (pitted)
  • ¼ cup honey
  • 1 Egg or 1 flax egg


Preheat oven 150°C. Combine Grilo Organic Cricket Flour, almond meal, tapioca, baking powder, dates and spices in a food processor. Process until combined and mix is crumbly.
Add coconut oil, honey and egg. Process again until a soft dough forms. Remove the dough and flatten down slightly between 2 pieces of baking paper – about 3 mm thick.

Refrigerate for 1 hour to allow the dough to firm up. If in a hurry, place in the freezer for 20 minutes. Cut out into shapes with a gingerbread cutter and place cookies onto a baking tray lined with baking paper.

Bake at 150 C for 30 minutes or until golden.
Remove from the oven and cool.
