Immunity Boost Green Soup

This is another delicious recipe from our friend and mumma Marit. Her words: “I have no words for this soup. It is the epitome of nourishment + comfort. The abundance of greens makes it super cleansing and alkalising; giving your body the perfect reset. Another one of our winners from our wholefoods program!”

Ingredients:

  • 1 tbs (10g) Grilo Cricket Powder
  • 1 tbsp olive/avocado oil
  • 1 garlic clove, crushed
  • ½ red onion, diced
  • 1 large zucchini, roughly chopped
  • 1 head of broccoli, roughly chopped
  • 2 cups baby spinach
  • 1 cup water (more if needed)
  • 1 tbsp organic miso or homemade stock
  • 1 tsp pink salt
  • 2 tbsp raw pumpkin seeds

Method:

Sauté the onion and garlic in olive oil until soft. Add remaining ingredients except spinach and pumpkin seeds. Bring to a gentle simmer until tender. Stir through spinach, pumpkin seeds and a good glug of olive oil. Remove from heat and blend until smooth and creamy.
