Lentils and Potato Stew

Ingredients:

    • 1 tbs (10g) Grilo Organic Cricket Powder
    • 1 tbs Grilo Immunity Boost Super Seasoning
    • 2 onions, sliced
    • 2 medium potatoes, cut into chunks
    • 3 garlic cloves, sliced
    • 1 large carrot, sliced
    • 2 stalks celery, sliced
    • 2 tbsp tomato passatta
    • 1 tsp ground cumin
    • ½ cup dried green lentils
    • 400g diced tomatoes
    • 5 large kale leaves, roughly chopped
    • Handful parsley to serve

Method:

Preheat oven to 180°C. Pop the potato on a baking tray and drizzle with olive oil + salt. Bake for around 30 minutes, until the potatoes are tender. Place aside.

While the potatoes are cooking, sauté the onion, garlic, carrot + celery in a pan until soft. Add the immunity powder, passatta and cumin and cook for another 5 minutes. Add the green lentils and cover with water. Simmer for 35-40 mins, until the lentils are soft and the water has reduced.

Stir through the roasted potatoes, tinned tomatoes + kale and cook for another 10 mins. Sprinkle over parsley before serving.
