Açaí and Blueberry Granola

This granola combines everything you need to kickstart your day. It’s got açaí powder which gives your body a lot of energy and cricket powder for a boost of protein. It’s so healthy and tastes amazing. Add some fruits and coconut yogurt to it and be happy!

Ingredients:

Dry ingredients

 

Wet ingredients

  • ⅓ cup fresh blueberries
  • 1 tea spoon acai powder
  • 2 tbs rice malt syrup
  • 3 tbs coconut oil

 

Non-baked ingredients

  • ⅓ cup dried black currant
  • ½ cup puffed buckwheat
  • ⅓ cup raw cacao nibs

Method:

Pre heat the oven to 160°C and line baking tray with baking paper.
Mix all dry ingredients in a large mixing bowl.
Combine all wet ingredients in a blender and blend it till it gets liquid.
Add wet mixture to the dry ingredients, stirring well to ensure all of the dry ingredients are well coated.

Spread evenly on a lined baking tray and bake it for approximately 20-30 minutes or until golden brown. Stir regularly to avoid clusters and check regularly to avoid burning.
Allow the mixture to cool completely and add all non baked ingredients.

Stir it and store your granola in airtight container.
