Cricket Carrot Cake

We have been trying to make the most delicious and healthiest version of a carrot cake. And we finally did it! This carrot cake need just a few ingredients and it’s very easy to make. We also made a nice vegan chocolate ganache recipe for those who feel like having some chocolate on top. The cake taste amazing either way.

You will need a blender, a bowl, spring form pan (22cm) and baking paper to do this recipe.

Ingredients:

Dry

 

Wet

  • ½ cup coconut oil or rice brand oil
  • ¾ cup water
  • 2 medium carrots
  • 1 cup of medjool dates (pitted)

 

Chocolate Ganache (optional)

  • 2 cups coconut cream
  • 1 cup cacao powder
  • ½ cup medjool dates (pitted)

Method:

Preheat oven 170 o C .
Line baking paper (30cm) on bottom of a spring-form pan.
Using a bowl, put all dry ingredients, mix using your fingers then set aside.
Using a high speed blender, combine all wet ingredients blend until a thick paste.
Using a spatula, remove paste from blender and put inside the bowl with dry ingredients, mix well until it forms a dough.
Put the dough inside the spring-form pan, use the spatula to smooth it out.
Put in the oven and bake for 25 min or until is nice and golden.
Let the cake completely cool down before cutting it.

 

Chocolate ganache:
While the cake is baking, make the ganache.
Put all ingredients in blender, blend it until mix becomes very smooth .
Use a spatula to remove all the ganache from blender, put ganache in the fridge to set.
Spread the ganache on top of the cake.
