Cricket Paleo Bread

Crickets are a great alternative for people who want to get the benefits of the Paleo diet, but don’t feel like eating meat. Crickets and other insects have been called the most true Paleo protein. Researches suggest our earliest ancestors were eating insects and berries, not meat with every meal. And unlike big animals, crickets are ingested whole with no waste.

On top of that, you’re eating something minimally processed and packed with other great nutrients like vitamins, minerals and antioxidants.

Ingredients:

  • 2 tbs Grilo Organic Cricket Powder
  • 1 ½ cup almond meal
  • ½ cup coconut flour
  • 1 tsp baking powder
  • Pinch of salt
  • 400 g sweet potato (steamed)
  • 1 tbs honey
  • 1 tbs lemon juice
  • 50 g coconut oil
  • 4 eggs or 4 flaxseed eggs*

 

*To make 4 flaxseed eggs: Mix 4 tbs ground flaxseed with 12 tbs water and refrigerate for 15 min before using.

Method:

Preheat the oven to 150°c.
Grease a small loaf tin with coconut oil.
Combine Grilo Organic Cricket Powder, almond meal, coconut flour, baking powder and salt into a bowl. Mix it well.
Put the mixture into a blender or a food processor. Add the sweet potato, honey, lemon juice, eggs or flax eggs, coconut oil and ½ cup of water.
Blend it until all ingredients are combined, if is to thick add another ¼ cup of water to help with the blending.
Pour this wet mixture into the bowl, mix it using a spatula.
Spoon the mixture into the loaf tin, and bake it for about 1 hour and 10 min.

 

Tip: Make sure you cool down the bread for one hour before slicing.
